The Egg and I

Well, the new girls are working out: since Monday we've packed over 12 dozen eggs. Our production is now averaging almost three dozen a day - and that's a fantastic number for February in Indiana with 76 hens.

But the best thing about this new regimen is also the simplest: I get to eat eggs again! When we were struggling to get our orders filled, we had pretty much taken eggs off the menu. Neither of us can eat store bought eggs anymore, so we only used them for baking, and skipped just eating eggs.

Tonight for dinner we had ham and eggs - more of a country breakfast. It was delicious: no wonder I sell so many of the blasted things!
